That's a "single coyote". A "double coyote" is when she's so heinous that you chew off your other arm, too, so that you'll never do it again.

As an aside, the Sister Mary Agnes Mansour incident was a bit more complicated than Mo makes it out to be. Sr. Mary Agnes wanted to follow her conscience, not the Church's teachings. That's quite alright, but usually requires you to make a difficult choice. She choose to force the Church into making it for her.
